If you are looking for something fun and festive to make, I have a perfect recipe for you. Pineapple Fruit cake, it is the best fruit cake I have ever had. Well, the best fruit cake my husband has ever had. Fruit cakes aren’t my thing!

This fruit cake is best served the day after it is made. Once it has finished baking and cooled, if you wrap it in saran wrap and put it in the fridge, it will be even moister the next day. My husband swears by this! I always laugh at him because he always waits til the next day to eat the fruit cake; he refuses to eat it the day it is made. Below you will find the recipe. Ingredients:

¾ cup margarine

1 cup sugar

2 eggs

3 cups flour

2 tsp baking powder

1 pound raisins

8 oz shredded coconut

8 oz mixed peel

8 oz glazed cherries

1 tin crushed pineapple and juice (add this last)

Directions:

Preheat oven to 350 degrees. Put all the ingredients in a bowl and mix well. I love to use our kitchen aid mixer for this but if you don’t have, mixing it by hand works well too. Bake for 1 hour. It should make 2 loaf sized cakes.
