Muffins that Taste like Donuts




Back in 2013 I posted about a favorite recipe of my husbands, known as Muffins that taste like donuts. But they are so great I had to post this again. The link is listed below.

Today I made these, muffins that taste like donuts, for him but changed the recipe a little and the style of the donuts. I was given a fantastic donut maker for Christmas and it makes great looking donuts. Because great looking donuts are important J The only changes that I made was to use all purpose flour with no whole wheat and I added in a small amount of nutmeg and extra cinnamon.

Here is the recipe updated:

1 3/4 cup all purpose flour

1 1/2 tsp. baking powder

1/2 tsp. salt

1/4 tsp. nutmeg

1 tsp. cinnamon

3/4 cup white sugar

1/3 cup oil

1 egg

3/4 cup milk

2 tbsp. flax seed

Combine the first five ingredients in a bowl. Combine the last ingredients into a separate bowl and mix well. Combine the wet ingredients with the dry ingredients and stir just until combined. Put in muffin pan or donut pan, whichever you prefer.

Bake at 350F for about 20 to 25 minutes. Or if you have a donut maker it takes only 6 to 7 minutes to bake.

Once they are done you can add toppings of your choice. You can roll them in powdered sugar, or spread melted butter on top, then add sugar and cinnamon, or cover them with icing. You can even leave them plain with nothing on them. You could also put berries in them, or a jam filling. You can create them anyway you like, that is the best part about them.
