Very Berry Muffins



I have been searching for a great blueberry muffin recipe for a long time. I came across this one the other day in a recipe book titled “Celebrating Cupcakes and muffins” By Michal Moses. Even though this recipe calls for mixed berries, I used just blueberries. The recipe tastes great and is very simple to make. Love it!


2 large eggs

1 cup milk

3.5 ounces (7/8 stick) of butter, melted

1 tsp vanilla

½ cup sugar

2 cups plus 2 tbsp flour

1 tbsp baking powder

½ tsp salt

¼ tsp grated lemon zest

7 ounces mixed berries (frozen or fresh)


Preheat oven to 375 degrees. In large bowl, whisk eggs, milk, butter, vanilla, and sugar until combined. In a separate bowl, sift together flour, baking powder, salt, and lemon zest. Gently fold flour mixture into butter mixture until just blended, Do not over mix. Fold in berries. Spoon batter into muffin cups. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean. Let cool on wire rack. Serve warm.
