Muffins that taste like Donuts

Muffins that taste like donuts…seriously they do. My husband loves them, every time I make them they don’t last long.  I like to make different variations of them, I use different stuff for toppings, such as powdered sugar, cinnamon and sugar, chocolate, etc. I have even tried to make them fruit filled.  While they are called muffins and should be made in a muffin pan, I don’t want them to look like muffins, I want them to look like donuts. I found some silicone donut shapes on sale and that is what I use. So they are muffins that taste and look like donuts. Below is the recipe that I use, I’m not totally sure where it came from but we love it and use it all the time.

 

Here is the recipe that I use:

1 3/4 cup all purpose flour (I use a mix of all purpose and whole wheat)

1 1/2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. cinnamon

1/3 cup oil

3/4 cup white sugar

1 egg

3/4 cup milk

2 tbsp. flax seed

Combine the first five ingredients in a bowl. Combine the last ingredients into a separate bowl and mix well. Combine the wet ingredients with the dry ingredients and stir just until combined. Put in muffin pan or donut pan, whichever you prefer.

Bake at 350F for about 20 to 25 minutes.

Once they are done you can add toppings of your choice. You can roll them in powdered sugar, or spread melted butter on top, then add sugar and cinnamon, or cover them with icing. There are so many combinations that you can do. If you want to add fruit in the middle, first put in a small amount of batter, then add a spoonful of the fruit filling of your choice, then another amount of batter. Good ahead and get creative!
